Tokubetsu Junmai

Junmai Tokubetsu begins with 100% Yamadanishiki rice grown in Hyogo Prefecture, which is polished until only 60% of the grain is left. This sake is lovingly handcrafted through every step of the process, from making Koji rice to hand bottling.

Nanbu Bijin(Iwate)

Ginjo Umeshu

A luxurious plum liqueur made with Shiraume, or white flower plums. The plums are preserved in the finest Ginjo sake, made from Yamadanishki rice. After being marinated for months, the fruits are removed from the tank, then Shiraume Ginjo Umeshu is left to age for two and a half years.

Junmai Ginjo

Crafted with a hundred percent Hyogo Prefecture's Yamada Nishiki rice and meticulously brewed using the ultra-soft water "Kitano Homyo Mizu" sourced from 100 meters below the ground. After pressing, it is promptly bottled and stored raw, allowing the flavors to mature. The bottling process occurs only after patiently waiting for the richness to develop, followed by rapid chilling at -5°C in a refrigerated chamber.

This junmai ginjo is brewed with water that started as snow in the mountains around the brewery and, over many years, melted then filtered through the earth. This gives the sake a pure, refreshing taste, but enough transparency for you to notice the nuanced smoothness.

Junmai

As new sake styles developed in the 20th century, Daishichi Brewing Company wanted to create a classic and noble sake with rich and deep flavors to represent the good old values. The layers of umami from the rice and expansive expressions it reveals once warmed, they believe, is only achieved by the long, robust fermentation of their kimoto process and the precise and careful carving of each grain of rice.

Ozeki Sake(Hyogo)

This junmai daiginjo is brewed with Yamadanishiki rice polished to 45%. The yeast used is Imazu Benikanzakura, a new type of cherry blossom yeast that was discovered in 2019 in Nishinomiya, Japan. This exclusive ingredient gives “Sakura Beauty 45” a mellow, delicate aroma and a honey-like sweetness that finishes dry. It’s elegant when chilled, but its notes of pear, apple and peach are most expressive at room temperature.

Futsushu

The sake has matured to become a sake that can be enjoyed at a wide range of temperatures. It has a dry expression when drunk cold or at room temperature. When it is warmed up to 40°C/104°F, the flavour swells and the aftertaste is mellow and the umami reaches its peak. When warmed further, the flavour sharpens to 55°C/131°F. The umami takes on the flavours of hot meat and fried food, while the sharpness in the throat helps to refresh the palate by cutting the fat.
